ROASTED SHIKAMPURI KEBAB 

Ingredients

  • 250 gm Mutton Minced
  • 4 no  Cloves                                        
  • 1 Stick  Cinnamon Whole                         
  • 1/4 Tsp  Cumin seeds                               
  • 1/4 Tsp  Coriander seeds  
  • 1 Bay leaf                                                  
  • 2 no Green Cardamom      
  • 1 egg white
  • 1 boiled eggs sliced
  • 1Tbsp Ginger and Garlic Paste
  • ½ Tbsp Coriander fresh chopped   
  • ½ Tpsp Mint fresh Chopped 
  • 3 tbsp Garam Flour                           
  • green chili Chopped
  • to taste Salt   & pepper                   
  • 1 tbsp cashew nut roasted Paste


Method


  1. Roast cloves, cinnamon, cumin seeds, star anise, coriander seeds, and bay leaf and cardamom seeds. Blend them to a smooth powder.
     
  2. In a Mutton minced, add ginger, garlic, mint, coriander, gram Flour  and powdered spices.
     
  3. Combine Chopped eggs, Almond  together.

  4. Season & add chopped mint & cilantro to mixture.

  5. Shape the ground meat mixture in 30 gm to 50 gm round patties. Cook on the grill and finish in the oven.

  6. Garnish with coriander Sprigs, red onion rings (Laccha), Slant cut green chili.
